Hang the noodles, and all things prosper. In Zhongjiang, Sichuan, autumn hides in strand after strand of silver threads. Zhongjiang enjoys the reputation of being the "Home of Dried Noodles." Its thousand-year-old handmade dried noodles are a Sichuan Provincial Intangible Cultural Heritage item and a National Geographical Indication product. Flour milled from local wheat is mixed with salt water and slowly awakens between fingertips and time. Kneading the dough, rolling it into strips, placing it on rods, pulling it into noodles, and drying it in the sun—eighteen steps, link by link, stretch the fragrance of wheat into strands as fine as silver threads, hollow and airy.

This year, with the arrival of the Autumn Equinox, Zhongjiang Guamian Village held its first "Kaigua Festival" (Noodle-Hanging Festival). At three strikes of the gong, the whole village shouted in unison, "Kaigua le!" ("Hang them up!" ). On the rooftops, dozens of households hung noodles at the same time; silver threads fell in neat rows, like a silver waterfall pouring over the gray tiles.

A mouthful of dried noodles is a response to the autumn harvest and a continuation of a thousand-year-old craft.
